Dangsanmaru is a distinctive Korean restaurant that promotes Buan by creating various popular dishes using mulberries, a special ingredient of Buan-gun. Specialties include the Dangsan Korean full-course meal and the Maechang mulberry Korean full-course meal as well as mulberry steamed rice. A full-course meal comes with over 20 side dishes including mulberry steamed rice, fermented skate with pork, soy sauce-pickled blue crab, grilled fish, bulgogi beef, fermented soybean paste stew and more. Key ingredients, such as Korean traditional soybean paste, soy sauce, sea salt, which is aged for two years to remove brine, red chili pepper flakes, are all locally sourced. On the menu are also seasonal local specialties from Buan-gun, Jeollabuk-do, such as webfoot octopus, blue crab, and Korean gizzard shad.
Development
Dangsanmaru makes its own basic seasoning and condiments, such as Korean traditional fermented soybean paste, soy sauce and gochujang paste. The mulberry and mulberry leaf used as ingredients are organically cultivated in Buan-gun county, adding freshness to the food, which is served alongside Buan’s very own pickled seafood. The restaurant has also created functional dishes using Buan’s specialty produce ‘chambbong’, a type of mulberry.

Current Status
Dangsanmaru is designated as the official local restaurant representative of Jeollabuk-do. Mulberry steamed rice is acclaimed as the province’s main staple food. The restaurant received the award from the Korean Ministry for Food, Agriculture, Forestry and Fishery at the Jeollabuk-do Local Food Competition and took part in the “Hope Sharing Nameplate” campaign led by the Red Cross. The campaign worked to release a ‘happiness virus’ by practicing the culture of sharing, as participants attached “hope sharing nameplates” on local businesses that were interested in social contribution.
